  • 1 9x9 inch square baking pan
  • 1 Mixing bowls
  • 1 Electric mixer or hand whisk

For the Base:

  • 1 cup digestive biscuit crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons sugar

For the Cream Cheese Layer:

  • 8 oz (225g) cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream or whipped topping

For the Jelly Layer:

  • 2 packets(about 14g each) unflavored gelatin
  • ½ cup cold wate
  • cups fruit juice (e.g., orange juice, berry juice)
  • ½ cup sugar
  • 1 cup assorted fresh berries (optional, for topping)


  • Base Layer:
    In a bowl, mix the biscuit crumbs, melted butter, and sugar until well combined.Press the mixture firmly into the bottom of the baking pan to form an even layer.Place the pan in the refrigerator to set while you prepare the next layer.
  • Cream Cheese Layer:
    In a mixing bowl, beat the cream cheese until smooth and creamy.Add powdered sugar and vanilla extract, continue to beat until well combined.Fold in the whipped cream or whipped topping until the mixture is smooth.Spread the cream cheese mixture evenly over the chilled biscuit base.
  • Jelly Layer:
    In a small bowl, sprinkle the gelatin over cold water and let it sit for a few minutes to bloom.In a saucepan, heat the fruit juice and sugar over medium heat until the sugar is dissolved. Do not bring it to a boil.Add the bloomed gelatin to the warm juice mixture and stir until the gelatin is completely dissolved.Allow the juice mixture to cool slightly before pouring it over the cream cheese layer.Place the pan back in the refrigerator and let it set for at least 4 hours or until the jelly is firm.
