Ingredients
  

  • 1 cup ground almonds
  • 1&1/2 cups powdered sugar
  • 1/2 cup all-purpose flour
  • 5 egg whites
  • 3/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • Confectioners' sugar for dusting (optional)

Instructions
 

  • Preheat your oven to 350°F (180°C). Grease a friand tin or muffin tin generously, or use paper liners.
  • In a large mixing bowl, combine the almond meal, powdered sugar, and all-purpose flour. Mix well to ensure even distribution.
  • In a separate bowl, whisk the egg whites until they form stiff peaks. This can be done with a hand whisk or an electric mixer.
  • Gently fold the whisked egg whites into the dry ingredients until just combined.
  • Add the melted butter and vanilla extract to the batter, and fold until the mixture is smooth. If desired, add the lemon zest for a citrusy flavor.
  • Spoon the batter into the prepared friand or muffin tin, filling each mold about three-quarters full.
  • Bake in the preheated oven for approximately 15-20 minutes or until the friands are golden brown on top and a toothpick inserted into the center comes out clean.
  • Allow the friands to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  • Optional: Dust the cooled friands with confectioners' sugar before serving.
