Ingredients
  

  • 2 cup all-purpose flour
  • teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt  
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoon s key lime zest (from about 6 key limes)
  • 1/4 cup fresh key lime juice (from about 10 key limes)
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  • Stir in the key lime zest, key lime juice, and vanilla extract until well combined.
  • Gradually add the dry flour mixture to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  • Divide the cake batter evenly between the prepared cake pans. Smooth the tops.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and let them cool completely on a wire rack.
  • To make the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, key lime juice, and key lime zest, and continue to beat until the frosting is smooth and fluffy. Add green food coloring if desired.
