  • 2 carrots peeled and diced

  • 6 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

Instructions
 

  • Rinse Lentils:
    Rinse the lentils under cold water and set them aside.
  • Sauté Aromatics:
    Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.
  • Add Lentils and Spices:
